Pine Nut Pie
Pie crust:
1 cup flour
1/3 cup shortening
Pinch of salt
2-3 tablespoon water, or as needed
Pie filling:
1/3 cup + 1/4 cup sugar
5 teaspoon maple syrup
3/4 teaspoon corn starch
1 teaspoon cold water
1 large egg plus 1 for egg wash
1/4 teaspoon vanilla
Pinch of salt
1/3 cup toasted pine nuts
Instructions:
Cut shortening into flour, add salt and water as needed to form a ball of dough. Separate into three pieces. Roll out each piece to fit three 4-inch pie pans.
In a small sauce pan add sugar, syrup and butter. Add corn starch slurry, bring all ingredients to a boil and take off heat. In a medium bowl, whisk egg. Stir in warm sugar mixture to whisked egg. Stir in vanilla and pinch of salt. Separate toasted piñons into pie shells and cover equally with sugar mixture. Apply egg wash to crust.
Bake for 20-25 minutes at 325 degrees.
Amaranth Corn Pudding
Recipe from chef Andrea Murdoch of Four Directions Cuisine, LLC
1 1/4 cups corn stock
1/2 cup coconut milk
1/3 cup amaranth
4 1/2 tablespoon amaranth flour
2 1/2 tablespoon maple syrup
pinch of salt
lime to taste
Instructions:
Corn stock- Depending on how strong of a corn flavor you want (video shows a light corn stock that was boiled for 20 minutes), add 2 cups water to a pot and bring corn cobs to a boil (add more water, another corn cob and longer boiling time if you want a stronger corn flavor). Reduce uptill you have 1 1/4 cups stock.
Pudding- Bring corn stock and coconut milk to a simmer, add amaranth and amaranth flour. Simmer for 15 minutes. Add pinch of salt, lime juice and maple syrup before cooling down and serving.
Wild Rice with Cranberries and Pine Nuts
1 cup wild rice
3 cups water or chicken broth
1/2 cup dried cranberries
1/4 cup toasted pine nuts
2 tablespoon butter (optional)
Instructions:
Bring wild rice and water/broth to a boil. Lower temperature and simmer for 30-40 minutes, until liquid has evaporated. Steam or soak cranberries in hot water to re-hydrate for about 5 minutes. Toast pine nuts. Rice is done when grains have bloomed or curled. Add all ingredients with optional butter and mix.
